I moved into my first apartment a few weeks ago and have been excited to get some healthier homemade recipes going. My dad loved to buy chips and sweets, and it was hard for me to keep track of what was and wasn’t in the fridge. So, it was harder to maintain a healthy diet. My boyfriend has felt similarly, as he’s lived on campus and always said I eat healthier than him.
So, I’ve worked to figure out recipes that fit my dietary needs (low glycemic), and are tasty and healthy for the bf!
I’ve been balancing recipes from a few cookbooks and pintrest pins.
Here’s what I’ve put together this weekend:
- Blackened chicken, black beans, corn, and Mexican brown rice.
- Flourless chocolate brownies (made with garbanzo beans!); one batch is sugar-free (and better in my opinion).
- Baked Sweet Potato Chips (sea salt and vinegar, and cinnamon with agave syrup)
- Baked Tortilla Chips (made with whole wheat tortillas and flavored with ranch seasoning)
And tonight, my boyfriend is going to teach me how to grill by grilling some steaks that have been marinating and that’ll come with a side of mashed potatoes - his specialty.
